
INGREDIENTS
- One Yellow Bell Pepper
- 6 red or yellow cherry tomatoes – quartered
- One Avocado peeled, pitted and halved
- One jalapeño- sliced
- One onion sliced into think rounds
- ½ cup of mayonnaise
- 2 Tbsp olive oil
- 4 naan
- Salt and Pepper to taste
- 2 Tbsp of fresh chopped cilantro

Grilled Veggies and Flatbread
DIRECTIONS
- In a large bowl- mix yellow bell pepper, cherry tomatoes, avocado, jalapeño, onion and olive oil.
- Grill veggies over high heat until charred. Avocado – 3 minutes, remaining veggies approximately 8 minutes.
- Slice bell pepper and jalapeño into rings, slice avocado into thin slices, separate onion into rings.
- Char the naan, about 3 minutes.
- Top naan with mayonnaise and grilled veggies. Garnish with fresh cilantro and season to taste.
