INGREDIENTS

  • One Yellow Bell Pepper
  • 6 red or yellow cherry tomatoes – quartered
  • One Avocado peeled, pitted and halved
  • One jalapeño- sliced
  • One onion sliced into think rounds
  • ½ cup of mayonnaise
  • 2 Tbsp olive oil
  • 4 naan
  • Salt and Pepper to taste
  • 2 Tbsp of fresh chopped cilantro

Grilled Veggies and Flatbread

DIRECTIONS

  • In a large bowl- mix yellow bell pepper, cherry tomatoes, avocado, jalapeño, onion and olive oil. 
  • Grill veggies over high heat until charred. Avocado – 3 minutes, remaining veggies approximately 8 minutes.
  • Slice bell pepper and jalapeño into rings, slice avocado into thin slices, separate onion into rings.
  • Char the naan, about 3 minutes.
  • Top naan with mayonnaise and grilled veggies.  Garnish with fresh cilantro and season to taste.
